Beef, Black Bean and Rice Burrito
A big burrito in the style of San Francisco’s Mission District: spiced beef with toasted cumin, cilantro rice, black beans, melty cheese, salsa and sour cream in a warm flour tortilla. The key is rolling it properly and searing the seam so the burrito holds its shape to the last bite.

About the recipe
The Mission burrito: history in a single wrap
The burrito is a northern Mexican dish: a wheat tortilla wrapped around a filling that is easy to eat by hand. The big, fat burrito known around the world today took shape in the 1960s and 70s in the Mission District of San Francisco. Local taquerias began putting everything into one enormous flour tortilla — meat, rice, beans, cheese, salsa and sour cream — and rolling it into a tight foil-wrapped cylinder. A burrito like this is a full meal in one hand.
The meat: spices bloom in fat
The flavour of the filling rests on three things: well-browned meat, spices and acidity. The beef is fried over high heat in small batches so it browns rather than stews. Cumin is best toasted as whole seeds in a dry pan for 30–40 seconds and then ground — the aroma becomes many times brighter. Chilli powder and cumin go into the meat with a spoonful of oil: their aromatic compounds are fat-soluble and bloom in fat.
Rice and beans
Burrito rice must be fluffy, not sticky, or the filling turns to mush. It is tossed with chopped cilantro and a pinch of salt. Black beans add a dense, slightly sweet texture and protein; just warm them and lightly crush with a fork so some beans stay whole.
The tortilla — the most common mistake
A cold tortilla cracks when rolled. Always warm it: 15–20 seconds per side in a dry hot pan or over an open gas flame. A warm tortilla becomes pliable and smells of toasted grain. Large burritos need tortillas 30 cm across.
How to roll a burrito
Lay the filling across the bottom third of the tortilla in a tight log, leaving 5 cm clear at the sides. Pull the bottom edge over the filling and tuck it in snugly, fold in the sides and roll forward tightly. Do not overfill: 280–300 g for a 30 cm tortilla is the limit. Put wet components (salsa, sour cream) in the centre, between the dry layers of rice and cheese, so the tortilla does not go soggy.
Searing the seam
Place the finished burrito seam side down in a hot dry pan for 1–2 minutes: the seam seals and the surface turns golden and slightly crisp. This step turns a wrapped filling into a unified dish.
To go
Wrap the burrito tightly in foil — it stays warm for 30–40 minutes. Burritos without salsa and sour cream can be frozen and reheated in their foil at 180 °C for 25–30 minutes.

Instructions
- 1
Toast 4 g of cumin seeds in a dry pan for 30–40 seconds until fragrant and grind in a mortar. Finely chop the onion and garlic and chop the cilantro.
- 2
Heat 15 g of oil in a wide pan over high heat. Add 400 g of ground beef, spread it out and cook without stirring for 3–4 minutes until browned, then break it into small pieces with a spatula.
- 3
Add the onion and cook for 3 minutes, then the garlic, chilli powder, ground cumin and 3 g of salt. Cook for another minute. Pour in 50 ml of water, scrape up the browned bits and reduce to an almost dry, juicy mixture. Take off the heat.
- 4
Warm 300 g of black beans in a small pan with 2 tablespoons of water and a pinch of salt, and lightly crush with a fork. Toss 400 g of hot rice with half the cilantro and the remaining salt.
- 5
Warm each tortilla in a hot dry pan for 15–20 seconds per side until soft and pliable. Keep them under a towel.
- 6
On the bottom third of a tortilla lay a tight strip of a quarter of the rice, beans and meat, with a spoonful of salsa and sour cream in the centre and 30 g of grated cheese and some cilantro on top. Leave 5 cm clear at the sides.
- 7
Fold the bottom edge over the filling and tuck it in snugly, fold in the sides and roll the burrito forward tightly.
- 8
Place the burrito seam side down in a hot dry pan and sear for 1–2 minutes, then turn and brown the other side for another minute. Serve immediately or wrap in foil.
